Firstly be fit and properly equipped - good comfortable walking shoes/boots, clothes for all weathers.
London to Cornwall is far too far for a first hike. Start with some shorter long distance trails
like the Ridgeway
or the South Downs Way which are beautiful, involve relatively easy walking and have good rail connections along their entire lengths

The best maps for hiking are the Ordnance Survey Landranger Maps. These sheet by sheet cover the whole country, show the countryside in great detail including all public footpaths, tracks and local and national trails. www.ordnancesurvey.co.uk You can buy them at Waterstones or larger branches of W.H. Smiths or the Daunt Bookshop in Marylebone High Street or even better Stamfords in Long Acre near Leicester Square. They sell guidebooks to the major national trails too.
If I was starting a walk from London to Cornwall I'd start by taking a train from London Victoria to Amberley and then walk along the South Downs Way to Winchester, Then the Clarendon Way from Winchester to Salisbury; then I'd pick up the Wessex Ridgeway which will take you well into Dorset
and then may be follow the South West Coast Path for the rest of the way. Good Luck

Cornwall is downhill from London. Keep in mind that you will need food, shelter, the lavatory and protection for your feet and from the sun and rain. Drink plenty of water.
